Pumpkin Chocolate Chip Bread

If you haven’t noticed by now, Autumn is my absolute favorite time of the year. One of the myriad of reasons why I cherish this season is because it is the time to cook and bake with pumpkin. Yum! I have a whole array of pumpkin foods that I find utterly heavenly … more on that subject in a few weeks.

Today, though, I want so share with you a recipe that not only involves pumpkin, but chocolate, too. Who can argue with that?

Well, maybe Liz can. She is the one who got me hooked on this recipe in the first place. She is not really a chocolate fan. I know, pretty hard to believe. But if she won’t eat these, I will gladly eat her share!

Pumpkin Chocolate Chip Bread

3 cups canned pumpkin (I just use one large can.)

1 1/2 cups vegetable oil

4 cups white sugar

6 eggs

4 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 1/2 teaspoons salt

1 1/2 teaspoons ground cinnamon

1 1/2 teaspoons ground nutmeg

1 1/2 teaspoons cloves

mini chocolate chips (as many as your heart desires)

In a large bowl, mix together the pumpkin, vegetable oil, sugar and eggs. Mix well by hand or use an electric mixer. Blend in the flour, baking powder, baking soda, salt, ground cinnamon, nutmeg and cloves. Mix thoroughly. Bake in a preheated 350 degrees F oven. For baby muffins bake for 15-18 minutes. For muffins and small loaves, bake for 30-35 minutes. For medium and large loaves, bake for 45 minutes to 1 hour. Always use the minimum amount of time and check for doneness.

For variation you may add any of these: raisins (yuck!), mini chocolate chips (yum!), pecans or walnuts. You can also sprinkle the top with chopped nuts or drizzle with a powdered sugar glaze.

The key is to not eat too many in one sitting.

  12. I’ve never been a huge pumpkin fan. I don’t like Pumpkin pie, cookies, bread, etc; however, last year that changed a little. Someone brought over a loaf of pumpkin bread, and I couldn’t get enough of it. So I am now willing to branch out more and try good recipes! So thank you…I will give this one a whirl!

    I love pumpkin. I have a really yummy cheater box recipe. I can of pumpkin and the box mix for a spice cake is all you need. Mix pumpkin, spice mix and 1/2 C. water and follow the box directions. I guess huge pieces are only one point on weight watchers. It is a family favorite. I love Autmn as well! I bake tons which is good and bad!

  19. Oh those sound terrific, I’m a big fan of pumpkin. I have a recipe that’s similar and I throw in Craisins which are mighty tasty too. Don’t know if they can compare with chocolate chips . . .

  25. Here is another terrific recipe for almost the same thing. This one features whole wheat flour. I got it from the Hodgson Mill website.

    Whole Wheat Pumpkin Muffins

    2 c sugar
    1/2 c vegetable oil
    3 eggs
    1 1/2 c pumpkin
    1/2 c water
    3 c HODGSON MILL WHOLE WHEAT GRAHAM FLOUR
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1/2 tsp cloves
    3/4 tsp cinnamon
    1 tsp nutmeg
    1 c raisins (optional) [I always sub choc. chips!]
    1 c walnuts
    Preheat oven to 400 degrees. In a large bowl, mix together sugar, oil, eggs, pumpkin and water. In a small bowl, mix together flour, baking powder, soda, salt and spices. Add to first mixture and blend together with electric mixer. Add raisins (if desired) and walnuts. Let stand one hour at room temperature.

    Grease muffin tins (enough for 24 muffins). Bake 15 minutes.

    Makes 24 muffins. Each muffin: 215 calories: 2 g. dietary fiber, 35 g. carbohydrates; 3 g. protein; 9 g. fat; 1 g. saturated fat; 27 mg. cholesterol; 192 mg. sodium.
