It seems like it has been forever and a day since I last posted a Menu Plan Monday. We have now been back from our family vacation for a few days and finally I am beginning to feel a little more settled. I am one who always advocates I need an extra week of vacation after vacation so I can come home and unwind and get things back in order. At least we had a highly enjoyable, yet hot, trip. I even had the privilege of meeting a couple of blogging buddies, Lara of The Lazy Organizer and Julie of Mental Tesserae.
Anyway, back to the topic at hand. Since we were able to take a jaunt to our local Farmer’s Market the other day, we are going to have a lot of yummy, fresh fruit this week to munch on – apricots, peaches, marionberries, plums and more. I positively love summer time!
Monday: Kidney Bean Tacos and fruit
Tuesday: Hawaiian Chicken Bake, fruit and veggies
Wednesday: Leftovers
Thursday: California Spanish Salad and fruit
Friday: Shish Kabobs with Teriyaki Marinated Steak, veggies, fruit and rice
Saturday: Church Picnic
Sunday: My Day Off

Looks Yummy! The California Spanish Salad sounds good…do you have a recipe for that? I love refreshing salads in the summer!
