This recipe was served at a baby shower I recently attended and all who tasted this scrumptious dish instantly fell in love with it. You should have heard the loud roomful of women chattering away:
“Who made this?”
“Do you know who cooked this?”
“WOW! I have GOT to get this recipe.”
I finally struck the jackpot and got my hands on a copy of this recipe.
Crispy Potato Quiche
1 24 ounce bag frozen hash browns, thawed
1/3 cup melted butter
1 cup shredded pepper jack cheese
1 cup diced cooked ham
1 cup half and half
4 eggs
1/4 teaspoon seasoning salt
Press thawed potatoes in a 9*13 pan. Pour melted butter over and bake at 425 degrees for 25 minutes. Layer cheese and ham on top. Pour beaten eggs, cream and salt over the buttered potatoes. Bake for 30-40 minutes at 350 degrees.

Shouldn’t you call this a frittata not a quiche? By most cooks definitions a quiche has a crust, a frittata has all of the ingredients mixed together and then cooked, and an omelet has the eggs cooked and then folded around the toppings.
The Wannabe Food Snob: I suppose I am not “most cooks.” I got this recipe from my friend and hostess of the shower and this is what she had named it so I stuck with it. You may change the name if you would like. I tend to not mind the name as long as the food tastes good.
