Menu Plan Monday – March 19, 2007

During this last week I tried My So Called Perfect Life’s recipe for Hawaiian Chicken Bake and many of you asked me to let you know what we thought of it. Without further ado here is the verdict … drum roll please … we highly enjoyed it! I love finding new recipes that are “keepers” meaning they earn the distinct privilege of being put onto our growing list of rotating meals.

However, like I always seem to do, I tweaked the recipe just a little. I used 3 tablespoons of brown sugar instead of 2; I used red wine vinegar instead of just vinegar; and I used cut up chicken tenders instead of whole chicken breasts. I also baked it in a 9*13 casserole dish – the recipe didn’t specify what size dish to use. If you would like me to repost the recipe just let me know … and of course I will still credit it back to My So Called Perfect Life. Kudos to her for sharing the original! It is definitely making its way through bloggityville.
