Kidney Bean Tacos

This recipe always seems to intrigue people.  I know the first time someone was telling me about it, I silently laughed and thought I would never make such gross food.  The first time I decided to try it DH was very skeptical, but he now loves them.  They are incredibly easy, super fast to make and remarkably healthy.

Kidney Bean Tacos

1 to 2 cans kidney beans, drained, rinsed and heated

flour tortillas (white, wheat, multi-grain, etc.  I love multi-grain.)

1 carrot, finely grated

2 tomatoes, chopped

lettuce, shredded

cheese, grated

salsa

Place a tortilla in a warm skillet.  Sprinkle cheese on top.  Cook until cheese is melted.  Remove from pan.  Top with desired ingredients. 

Delicious!

For the health conscious and portion size seekers:  One serving is two tacos.  Each taco will have 1/4 cup beans, 1 1/2 tablespoons of cheese and as much of the other ingredients as desired.
