Remarkably Good Meatloaf
I know sometimes people laugh or gag at the thought of meatloaf (or they think of the singer Meat Loaf whom some people like and other people detest), but meatloaf the dish can actually be a pretty decent meal. The key is to have an incredible topping.
Meatloaf
1 – 1.5 pounds of ground beef or ground turkey
1 clove garlic
1 small onion, minced
1 cup bread crumbs (I usually use 3 slices of whole wheat bread)
¼ cup milk
1 egg
¼ teaspoon salt
½ teaspoon celery salt
½ teaspoon dry mustard
½ teaspoon pepper
1 tablespoon Worcestershire sauce
½ cup tomato sauce (use more for a moister meatloaf or less if you like it drier)
Meatloaf Topping
3 tablespoons brown sugar
¼ cup ketchup
1 teaspoon dry mustard
½ teaspoon nutmeg
Heat oven to 350. In large bowl, beat egg slightly. Mix in the remaining ingredients thoroughly. Spread in a loaf pan or press into a sprayed 9×9 pan. Bake one hour until done. Halfway through cooking, add the topping.

I love meatloaf (the meal) depending on how it is made…especially my hubby’s! And I like Meatloaf the singer. Meatloaf sounds so warm and comforting right now! It may have to go on our menu too.

Yep, I think topping is the key. My mom used to make meatloaf with mashed potatoes and cheese on the top- yummy! Despite my hamburger loving kids, they aren’t extremely crazy about meatloaf and so I started making mini meatloaves. For some reason putting them in muffin tins made them much more appealing. Another plus to this- it gets done much sooner!

My kids love meatloaf. I usually don’t make a topping for it, but I’ll try yours, it sounds yummy.
